Our Compost Machine

With our composting machine, we at Radisson Blu Scandinavia Hotel are taking another step forward in our environmental efforts. It is no secret that food waste represents a major environmental threat, with 30–40% of all produced food being thrown away. As an operator in the restaurant industry, we have reflected on how we can close the loop as much as possible. When our Food & Beverage Manager presented the idea of our own composting machine, it immediately felt like the natural next step.

Thanks to this initiative, we have been able to reduce our waste by 80–90% annually. The end product is a growing medium that is approved for organic farming, meaning that not only do we make use of food waste—we also contribute to the growth of Gothenburg, in the truest sense of the word.
